Rice with leeks and olives

  • 2, 3 leeks chopped
  • 1 big onion finely chopped
  • 2 carrots grated
  • 1 cup of rice
  • 1 cup of water
  • 200 g kalamata olives pitted
  • 1 cube of Maggie
  • Oil for frying

In a frying pan put little extra virgin olive oil then add the leeks, the onion and the carrots and allow to brown. Add the rice and stir. Put a cup of water and allow the rice to boil. Add the cube of Maggie and the olives, then introduce the pan into a preheat oven. The food is ready when the rice is cooked. If necessary supplement with water. It can be served with fresh chopped parsley on the top.
